SPAGHETTI SQUASH ITALIAN

Spaghetti Squash Recipe Ingredients:
  • 3 lb. spaghetti squash, pierced
  • 1/2 c. butter
  • 1/2 c. apple cider or white wine
  • 1 tbsp. Italian seasoning OR mixture of oregano, basil, and thyme
  • 3/4 c. Parmesan cheese
Spaghetti Squash Recipe Instructions:
Cook squash either by boiling or microwaving 18 minutes. Let stand 5 minutes. Meanwhile, melt butter and add remaining ingredients to butter. Bring to a simmer. Cut squash; remove seeds, remove spaghetti strands, and toss with sauce. Serves 6.

YELLOW SQUASH & SPAGHETTI

Spaghetti Squash Recipe Ingredients:
  • small yellow squash (they are more tender)- 2 for 1 serving- increase quantity as needed
  • any type of pasta noodle (whole grain preferred)
  • 2-3 tablespoons olive oil
  • butter (optional)
  • McCormick Pizza Seasoning (spice grinder) or other Italian seasoning
  • freshly grated Parmesan cheese
Spaghetti Squash Recipe Instructions:
First of all wash the squash, and slice into 1/4 to 1/2 inch thick pieces. If it is too thin, the squash will be soggy.

And then steam or boil the squash with a little olive oil and the Italian seasoning of your choice, add a few pats of butter if you dare!

Next is to boil the pasta according to package directions, add olive oil for flavor (and to keep pasta from sticking together); set aside.

Drain most of the liquid from squash; I like to reserve a little for flavor.

Toss the squash with Parmesan cheese and serve on a bed of pasta. Add more Italian seasoning if you choose.

This is a super simple recipe, but I love it in the Summer when I have fresh squash from the garden.

Spaghetti Squash With Tomatoes
Spaghetti Squash Recipe Ingredients
  • 1 cooked spaghetti squash, halved, seeds removed
  • 1 medium onion, chopped (1/2 cup)
  • 1 green pepper, chopped (1/2 cup)
  • 1 large garlic clove, chopped
  • 2 tablespoons olive oil
  • 4 tomatoes, chopped (4 cups)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • salt and pepper
  • 2 tablespoons butter
  • 1/4 cup grated parmesan cheese
Spaghetti Squash Recipe Instructions
1Cook squash til done using any method you prefer- bake, boil, steam, microwave.
2When squash is nearly done, saute onion, green pepper and garlic in olive oil over medium heat until tender. (about 5 minutes).
3Stir in tomatoes, salt and pepper, oregano and basil. Simmer together about 5 minutes more.
4When squash is done, shred with fork, keeping it inside the shell. Toss with butter. Spoon mixture ontop of shredded squash, top with parmesan.

  • 1 spaghetti squash, halved and seeded
  • 1 tablespoon olive oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 cup chopped fresh cilantro
  • salt and pepper to taste
Spaghetti Squash Recipe Instructions

Preheat an oven to 425 degrees F (220 degrees C).
Place squash halves in a shallow baking pan with about 1 inch of water.
Bake squash in the preheated oven until soft, about 1 hour.
Scrape flesh of squash from the rind using a fork and place in a large serving bowl.
Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook and stir the black beans, tomatoes, bell pepper, and garlic in the hot oil until the vegetables are soft and the liquid has reduced, about 10 minutes; pour into the bowl with the squash; toss to combine. Add 1 tablespoon olive oil, the vinegar, and cilantro and toss again. Season with salt and pepper to serve...enjoy the spaghetti squash Southwestern style !

Baked Spaghetti Squash Lasagna Style













Baked Spaghetti Squash Lasagna Style
Spaghetti Squash Recipe Ingredients
  • 1 spaghetti squash, halved lengthwise and seeded
  • 1 onion, chopped
  • 2 tablespoons minced garlic
  • 2 (14 ounce) cans stewed tomatoes
  • 1 tablespoon dried basil
  • 1 cube vegetable bouillon
  • black pepper to taste
  • 1 (15 ounce) can black olives, chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
Spaghetti Squash Recipe Instructions

Preheat oven to 325 degrees F (165 degrees C). Spray a baking sheet with a thin layer of cooking spray. Place squash halves cut side down on the baking sheet.
Bake squash 35 minutes in the preheated oven, or until a knife can be easily inserted. Remove from oven, and cool.
Meanwhile, spray a non-stick saucepan with cooking spray. Over medium heat, saute the onion and garlic until golden brown. Stir in tomatoes, basil, bouillon cube, and black pepper. Cook for about 15 minutes, or until you have a medium thick sauce.
Remove squash strands with a fork, reserving the shells. Layer each half with a spoonful of the sauce, a layer of spaghetti squash strands, olives, and mozzarella cheese. Repeat layers until shells are full, or until all of the ingredients are used. Top with Parmesan cheese.
Bake for 20 minutes in the preheated oven, or until Parmesan cheese melts.
